Green Beans and Onions, what’s not to love?!

One of my most favorite combinations!

Usually a sweat the onions, steam the green beans and mix them together.

Today it was Oven-Roasted:

1 lb. green beans,

1 small (red) onion, cut in half and sliced

8 small cloves of garlic, thinly sliced

1 large shiitake mushroom, sliced (just because I happened to have it around.)

2 Tbs. balsamic vinegar

After preheating oven to 400 I got out the jelly roll pan, put the silpat in it. Sprayed it with olive oil. Layered on the green beans (salting and peppering them), onions, garlic and mushrooms.

Sprayed again with olive oil and drizzled on vinegar.

Roasted for nearly 40 mins., tossing and turning every 10 mins. These were older beans … haricorts verts or young beans would be done after 20 mins. probably.

Ate the whole thing with some naan for dinner.
